Rachel Zoe

Some of you may have heard of Rachel Zoe, some of you may not have.. It doesn't matter either way.
I am so sick of hearing her advice about style and what's "way in."  Everything that she "recommends" costs a fortune.. If she is supposed to be a "celebrity stylist" then good for her, get off of Piperlime and Redbook.  I can assure you that those are not celebrity sighting spots.  Who can't pick out an outfit that costs a zillion dollars..  On second thought maybe I'm just in the wrong business.  
The point of a good stylist -- is one that can make you look like a million bucks, without spending all that moola.. give it a rest honey.

What's For Dinner

Tonight I fell in love again, this time with a salad.  This has to be one of the best summer salads I might have ever had. 
Watermelon and Feta Salad
yum.


And it is SO easy, that even you could make it.  



Ingredients: (for about two people)
  • about half a bag of spring salad mix
  • kosher salt and pepper to taste
  • 2 tbsp virgin olive oil
  • 2 tbsp balsamic vinegar
  • about a cup of sliced watermelon
Directions:
Mix up all the ingredients and serve.  

How easy is that!

What's For Dinner

 
I stumble across a lot of random websites.  Last week I found this one.  And found this recipe that I HAD to try.  For those of you that didn't click on the links.. I made..
Sesame Encrusted Baked Chicken Tenders
For once, I actually followed this recipe to a T.  You will see that she served the tenders with soy sauce.  Well, I tried that had a thought.. "Wow.. wasabi would go GREAT with this!"  And guess what folks, it did.  I served it with some rice, carrots, and a salad.
My husband liked the sauce mixture better than the actual meal itself.. translation - not his favorite meal.. but I thought it was pretty yummy.

Here is the recipe:

Ingredients:
  • 18 oz chicken tenderloins
  • salt and pepper to taste
  • 2 tsp sesame oil
  • 2 tsp low sodium soy sauce
  • 6 tbsp toasted sesame seeds
  • 1/2 tsp course salt
  • 4 tbsp panko
  • olive oil spray
Directions:
Preheat oven to 425°.  

Spray a baking sheet with non-stick oil spray.  (I actually just put foil over a cookie sheet and spray it with a little olive oil -- this helps on the cleanup.. my least favorite part)

Combine
the sesame oil and soy sauce in a bowl, and the sesame seeds, salt and panko in another.
Place chicken in the bowl with the oil and soy sauce, then into the sesame seed mixture to coat well. 
Place on the baking sheet; lightly spray the top of the chicken with oil spray and Bake 8 - 10 minutes. 
Turn over and cook another 4 - 5 minutes longer or until cooked through.
